What’s going on: cooler water often leads to under-extraction—you’re not dissolving enough of the sweet and balancing compounds, so acidity sticks out.
A quick persuasion moment: if you’ve been buying nicer coffee hoping it fixes a sour or bitter cup… temperature is the cheaper fix.
3) Kettle options: variable temp vs the “30-second wait” trick
You’ve basically got two paths:

Option A: Variable temperature electric kettle (pros/cons)

- You can set it to 200°F and stop thinking about it
- Repeatable results (great if you’re dialing in)

Option B: Stovetop kettle + the “30-second wait” trick
No fancy kettle? Totally fine.
How to do it:
- Bring water to a boil.
- Take it off the heat.

4) Brew-method tweaks that actually change the cup
Same temperature range, but each method has one easy move that keeps your brew from losing heat where it matters.

Drip coffee: pre-heat the carafe
Thermal shock is real. A cold carafe steals heat fast.
Do this:
- Fill the carafe with hot tap water (or a bit of kettle water) for 30–60 seconds.
- Dump it right before brewing.
Result: more stable brew temperature, smoother taste, less random sourness.

Some pros go down to 175°F–185°F (especially for light roasts) to pull sweetness and reduce harshness.
Do this:
- If your AeroPress tastes sharp or bitter at 200°F, try 185°F first.
- If it gets sour, go back up toward 195°F–200°F.

- Pick a target: aim for 200°F (right in the middle of 195–205°F).
